Among the innovative services that MedCorp offers are cafeteria management, catering, mobile catering and cafeterias, design and consulting.

Cafeteria Management

Our aim is to provide the high-quality, fresh and tasty food that customers want and the warm and welcoming ambiance they prefer. All menu items will be prepared in-house to assure freshness and quality control. We keep our kitchen and your dining room clean, neat and presentable. Our staffs are uniformed and well-groomed at all times, and are further trained to keep a pleasant atmosphere in the dining area as an important part of the overall dining experience. Our principal’s more than 20 years in the business also enables us to find efficiencies in process, purchasing and management that have reduced our clients’ overall food costs while improving the quality, taste and portion size of the food served.

Cafeteria Design and Consulting

Our principals have extensive experience in designing commercial kitchens and selecting equipment, and helping clients to maximize the efficiency and cost-effectiveness of their cafeteria layouts. We re-designed the cafeteria services at Cuesta College, San Luis Obispo, CA, to attract a broader section of the campus community and make it a more relevant and profitable operation for the school. In managing the food services operations for the California & Hawaii National Guard, we have been successful in reducing the program’s food costs to 30% while improving the quality, taste and portion size of the food served.

Quality and Safety

MedCorp has a written quality control and inspection plan that details how we implement periodic, random inspections and audits. It provides checklists for quality assurance that can be easily adapted for each contract; provides for periodic quality training for staff; and creates a process for open communication with clients, vendors, employees and stakeholders. Further, our principal will meet throughout the year with clients to address issues, concerns, opportunities and ways to improve the quality of our meals and food service.

Our principal, Tomas Medeiros, Jr., and all facility managers are certified by the National Registry of Food Safety Professionals® as a Food Safety Manager. As such, they are responsible for training all employees at their respective facilities in food handling and food safety techniques. Further, all MedCorp facility managers are chefs or executive cooks, who provide food preparation training to employees. All new managers receive 80 hours of in-house food service management training including hands-on training under the direct supervision of an experienced manager. 

MedCorp trains and educates our employees to the highest standards. Our goal is to have enthusiastic, productive and effective employees who are knowledgeable about USDA and OSHA standards and our clients’ expectations. All food service employees receive training in Hazard Communication, Housekeeping and Material Storage, Hazardous Material and Spill Response, Incident Reporting and Investigation, in addition to food safety, food handling and food prep as previously mentioned. The training is drawn from T.B. MED 530, the US Army’s Technical Bulletin on Occupational and Environmental Health Food Service. Additionally, all employees including support staff receive training in matters such as sexual harassment training, accident reporting and other topics.

Environmental Awareness

As an environmentally friendly company, we routinely recycle materials and dispose of gray water and waste products off site in accordance with Federal, State and local requirements. We also recycle our frying oil for bio-fuel. Further, we engage in energy conservation and train employees to turn off lights that are not in use and to use water efficiently.

MedCorp provides the experience, whether catering to the United States military or our remote mobile catering services are designed to meet your needs, as well as the food selection and quality that our clients want. Emergency Response Mobile Catering

MedCorp works with California Mobile Kitchens, the industry-leading manufacturer of commercial mobile and modular kitchens for Government, industry and corporation, to create mobile catering facilities to meet a variety of client needs. Mobile units include refrigeration and freezer, ranges with ovens, burners and grill, fryers, tilt skillet, convection ovens, exhaust hoods, stainless steel sinks, a hand sink, stainless steel shelves and locking equipment containers. These units are fully self-contained, having their own generators, water tank and waste disposal units. Further, these mobile kitchens are NSF- and UL-compliant and contain fire suppression systems and water heaters. Mobile catering units provide us with the flexibility to provide food services at any location -- from serving 1,200 meals a day to support fire fighters battling wild fires throughout California, to mobile kitchens serving 500 meals for training exercises on National Guard bases.
